Instructions: Preheat oven to 350F/190C.
Dice onion, bacon and mushrooms. Melt butter in a fry pan, add onion and bacon and saute 2 minutes. Add mushrooms and continue to cook until soft. Grease 8 small ovenproof ramekins with butter and divide mushroom mixture evenly between each. Carefully break in an egg, add a small amount of cream, and top with grated cheese. Place in a bain marie with enough water to come 2/3 the way up the sides of dishes and cook in oven at 350F/190C for 10-15 minutes. Serve immediately. Variations: Place diced tomato, salmon, capsicum on bottom of dishes. Email this Recipe:
