8 x eggs, slightly beaten
8 oz cottage cheese
8 oz Swiss cheese, grated
8 oz feta cheese, cubed
1/4 cup butter, softened
20 oz frozen chopped spinach, thaw & drain
1 tsp ground nutmeg
----------------- CREAMY CHEESE SAUCE ----------------
2 tbl butter
3 tbl all-purpose flour
2 cup milk
2 cup Monterey Jack cheese, grated
1/2 tsp salt
1/4 tsp ground mustard
Instructions:
Instructions: Preheat oven to 350 F. In a large bowl, combine the eggs, all of the cheeses, and the butter and mix well. Stir in the spinach and nutmeg.

Divide the mixture into greased 8-inch ramekins and bake for 30 to 45 minutes, or until a tester inserted in the center comes out clean. Ladle 1 1/2 tablespoons of the Creamy Cheese Sauce over each ramekin and serve.

YIELD: 8 SERVINGS

Creamy Cheese Sauce:
In a medium-sized saucepan, melt the butter. Stir in the flour and cook, stirring constantly, for 3 to 5 minutes. Add the milk and cook, stirring constantly, until the sauce begins to thicken and bubble. Stir in the cheese and seasonings and cook until the cheese is melted.

Makes 2 to 3 cups.
