Instructions: Heat oil in a wide frying pan over medium-high heat. Add onion, bell pepper, garlic and zucchini. Cook, stirring occasionally, for 5 minutes. Reduce heat to medium-low, cover and cook 5 more minutes, until zucchini is crisp-tender. Add tomato sauce, parsley, basil and oregano. Simmer, uncovered, about 5 minutes, until sauce thickens slightly.
In a bowl, combine eggs, milk, salt and pepper; whisk until evenly blended. Pour over zucchini mixture. Cover frying pan and cook 5 minutes, or until eggs are set but still moist on top. Sprinkle cheese over eggs. Preheat broiler. Place frying pan 6 inches under broiler. Broil 1 minute or until cheese melts. Cut into wedges and serve from pan. Email this Recipe:
