8 x eggs
2/3 cup prawns, cooked
2 tbl mayonnaise
1 tbl lemon juice
1 tbl fresh herbs, chopped
salt, pepper
1/10 tsp paprika, sweet
parsley, to garnish
Instructions:
Instructions: Hald boil eggs, ten minutes. Cool and peel.

Halve eggs and remove yolks.

Reserve a few shrimps for garnish.

Place yolks, shrimp, mayonnaise, lemon juice, herbs and seasoning in food processor and blend to a soft, smooth paste. Add more mayonnaise if necesary.

Fill paste into a piping bag with a star nozzle, pipe rosettes into egg whites, sprinkle with paprika and garnish each egg with a shrimp and a small sprig of parsley.

Arrange on a plate lined with lettuce and serve.
