6 x Green chiles -- roast, peel,

1 med White onion -- chopped
1 tsp Salt -- or to taste
1 tsp Pepper
1 tsp Vinegar
1 tsp Oil
Instructions:
Instructions: Mash garlic in a wooden salad bowl. Add remaining ingredients, including cilantro, if desired, and toss. Chill before serving.

Yield: 2 cups
