1/2 cup brown sugar -- packed
1 cup cider vinegar
4 lrg clv garlic -- chopped
2 tsp minced gingerroot
1/2 tsp salt
1 tsp cinnamon
1 tsp chile powder
1/2 tsp cloves
1/2 tsp coriander
1/2 tsp black pepper
1/4 tsp crushed red chile pepper
1 lb tart apples peeled and diced
1/2 lb pitted prunes chopped coarsely
Instructions:
Instructions: Mix all ingredients in a large heavy saycepan. Bring to a boil and simmer, uncovered, stirring often, until fruit are very tender, 40-40 minuntes. Ladel into hot, sterilized half-pint jars and seal. Process in a boiling water bath for 15 minutes. Cool and store in refrigerator after opening.

Makes about 8 jars.

NOTES: This chutney is sweet-tart and is especially good with simple broiled or raosted meats
