Instructions: Combine first 4 ingredients in a medium saucepan; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Set aside and keep warm. Coat a large skillet with cooking spray; place over medium-high heat until hot. Add mushroom, celery, and green onions; saute until tender. Add reserved rice, artichoke hearts, tomato, parsley, and salt; stir well. Cover and cook over medium heat 2 to 3 minutes or until thoroughly heated.
