Ingredients:

1 lb Ground beef lean
1 cup Chopped onion
2 x cloves Garlic chopped fine or
1 tbl chopped garlic from jar
2 tsp Chili powder
1/2 tsp Dried oregano
1/2 tsp salt
1/4 tsp Pepper
1 can Enchilada sauce
2/3 cup Tortilla chips crushed fine
2 cup Cheddar cheese shredded
1/4 cup Milk
3 x Eggs
3/4 cup Bisquick
1 env taco seasoning
1 x RED bell pepper chopped Or 1 jar drained pimientos - chopped
Instructions:
Instructions: Heat oven to 400. Grease 10 in pie plate or small casserole. Brown hamburger with onions and drain. Stir in garlic, chili powder, oregano, salt, pepper and 1/2 c enchilada sauce, taco seasoning and corn. Sprinkle crushed tortilla chips evenly in dish. Top with 1 1/2c of cheese; spread with meat mixture. Beat milk, eggs and Bisquickuntil smooth, 15 seconds in blender on high. POur onto meat mixture. Bake until knife comes out clean, 25-030 minutess. Spread remaining sauce on top and sprinkle with remaining cheese. Bake until cheese is melted 3-5 minutes longer. Cool 10 mintues before serving and top with sour cream. Could add layer of chopped tomatillos on top also.
