Instructions: Preheat oven to 350 degrees. Coat a 13x9-inch pan with nonstick cooking spray.
Combine salsa and cilantro in a medium bowl; mix well. Set aside. Combine beans, corn, 1 cup salsa mixture, zucchini, 1/2 cup cheese and olives in another medium bowl. Place 1/3 cup bean mixture down center of each tortilla. Fold edges over filling. Place two rows of six tortillas each in pan. Cover with remaining salsa mixture. Sprinkle with remaining cheese. Bake at 350 degrees for 20 to 25 minutes or until cheese is melted and sauce is bubbling at edges of pan. Email this Recipe:
