Instructions: 2 Packages Enokis 1 large European cucumber or 2 small, thin cucumbers 3 tablespoon lemon juice 2 tablespoon sugar 1/4 teaspoon salt or to taste 8 ounce plain yogurt 1 green onion, thinly sliced
Prep Enokis as described above, rinse and pat dry. Scrub cucumbers well and do not peel. Remove seeds and slice into fine julienne strips or slivers about the same size as the Enokis. Toss cucumbers and Enokis together in a serving dish. In a medium-sized bowl, stir together lemon juice, sugar and salt. Add plain yogurt and blend. Pour lightly over Enokis and cucumbers. Garnish with green onion or scallions. Serve on a bed of leaf lettuce with cherry tomatoes as an accent. Serves 4-6. Email this Recipe:
