2 lb cooked lobster meat cubed
3 tbl fresh lime juice
1/2 cup olive oil
1/4 tsp Tabasco sauce
1 cup celery peeled and diced
1 tbl green bell pepper minced
1/2 cup red onion minced
1 tsp fresh cilantro chopped
2 x scallions, trimmed thinly sliced
1/3 cup mayonnaise
1/2 cup light sour cream
1/2 cup pimiento-stuffed manzanilla olives
curly endive or escarole
1 tbl fresh parsley chopped
Instructions:
Instructions: Combine the lime juice, olive oil, and Tabasco in a nonmetallic bowl. Marinate the lobster in the mixture in the refrigerator for 1 to 2 hours. Drain the marinade and discard.

Add the celery, green pepper, red onion, cilantro, scallions, mayonnaise, sour cream, and olives. Toss well. Line a large bowl with a bed of curly endive or escarole. Garnish with chopped parsley and wafer-thin lime slices.
