Instructions: Scrub zucchini; cut off stem ends and cut into 1" thick slices.
Cook in salted water for 5 to 7 minutes until crisp cooked. Drain. Combine next 8 ingredients in a jar; shake to blend well. Pour over zucchini and marinate several hours or overnight. Drain off dressing and save. Peel and slice avocado. Line a plate with lettuce. Arrange zucchini, avocado and olives on lettuce. Email this Recipe:
