Instructions: Heat the oven to 425 degrees. Melt the butter in a small saucepan. Stir 1 teaspoon salt and 1/2 teaspoon pepper into the butter. Sprinkle 1 teaspoon salt and 1/4 teaspoon pepper in the cavity of the chicken. Put chicken, breast side up, in a roasting pan. Brush the skin with the melted butter mixture. Roast the chicken in the preheated oven for 1 hour. Reduce the heat to 350 degrees and continue roasting (about 30 minutes longer), until the skin is golden brown and the juices run clear when the inside of the thigh is pierced with a fork.
