Instructions: Cut hot sausage in pieces (to equal 4 per lb.). Layer tomato paste, sausage, peppers, onions; repeat layering until all ingredients are in the casserole. Sprinkle hot red pepper in each layer. Add water to cover enough to reach the top of the last layer. Cover; cook at 325 degrees for 2 hours. Cover may be removed last half-hour to allow sauce to thicken.
Stir once or twice each hour. Adjust pepper flakes for desired spicy flavor. Serves 16 sandwiches. Email this Recipe:
