Exotic beans, also called heirloom beans, retain their striking markings and streaks of color even after they are cooked. Brown rice adds a soothing texture to this hearty dish and a nutritional boost. In a large saucepan, combine beans and water. Bring to a simmer. Cook uncovered over medium-low heat, stirring occasionally until tender, hours. Drain, reserving 1 cup cooking liquid. Meanwhile, combine rice and hot water in saucepan: bring to a boil. Cover: cook over low heat until liquid is absorbed (do not stir), 30 to 35 minutes. Remove from heat; fluff rice and let stand, covered, until beans are done. Heat oil in large saucepan. Add onion, bell pepper, celery and garlic; saute 5 to 7 minutes. Stir in beans and cooking liquid, cooked rice, crushed tomatoes and dried seasonings. Cook 20 minutes over low heat, stirring occasionally. Stir in parsley: let stand 8 to 10 minutes before serving. Ladle chili into bowls. Serve with warm cornbread or whole wheat bread. and bottled hot pepper sauce if desired. Makes 6 to 8 servings. Note: Heirloom beans are available in many gourmet grocery stores, natural food stores and well-stocked supermarkets.
