Ingredients:
Amount Ingredient
900 ml Soya milk, (1 1/2 pints)
40 gm Creamed coconut, (1 1/2 oz)
1/2 tsp Ground cinnamon
1 pch Ground cloves
75 gm Pudding rice, (3oz)
25 gm Dark soft brown sugar, (1oz)
Exotic fruits: mango, kiwi fruit, banana, paw paw and pineapple
Instructions:
Instructions: Place the milk, coconut and spices in a saucepan and heat gently until the coconut has dissolved.

Stir in the rice and sugar.

Bring to the boil, then reduce heat and simmer for 30-40 minutes stirring occasionally until the rice is tender.

Serve with the exotic fruits and pistachio nuts.

NOTES : A vegan rice pudding with an exotic flavour.
