Instructions: Step 1: Preheat the oven to 425 F. In a heavy 12-inch ovenproof skillet, melt the butter in the oven. Meanwhile, in a large bowl, with an electric mixer on Medium, beat the eggs, egg white, milk, flour, granulated sugar, orange rind and juice, 1/4 teaspoon of the cinnamon, and the nutmeg for 2 minutes or just until smooth.
Step 2: Remove the skillet from the oven. Tilt to coat the sides with the butter. Pour in the batter. Bake for 20 minutes or until puffed and golden. Step 3: In a small bowl, mix the confectioners sugar with the remaining 1 teaspoon of cinnamon and sprinkle over the cake. Serve with fresh berries or syrup if you wish. NOTES : Southerners have long been known for inviting the neighbors in for large country breakfasts. This skillet cake, which originated in South Carolina in the 18th century, resembles a giant puffy pancake. Makes 4 servings. Preparation Time: 18 minutes. Cooking Time: 20 minutes.
