Instructions: In a large bowl, beat together the eggs, pumpkin, sugar, and spices until well blended. Add the baking mix, 1/2 cup at a time. While continuing to mix, pour in
the buttermilk, a little at a time, and beat until smooth. (The batter should not be too thick.) Set the batter aside for 10 to 15 minutes. Stir the batter again and add more milk if too thick. In a lightly greased hot skillet, ladle the batter and turn the pancake when bubbles appear. As the pancakes are cooked, place on a platter and hold in a warm oven.
