Ingredients:
Amount Ingredient
2 lb Dried giant white beans
2 cup Oil
1 head of garlic
3 x Onions, med., chopped
1 tbl Celery, chopped
1/2 cup Parsley, minced
Salt & pepper to taste
1 cup Hot water
3/4 lb Tomatoes, peeled,strained OR
1 tbl Tomato paste + 1 1/2 c water
Instructions:
Instructions: Wash the beans, place in water, and soak them overnight. Drain them, then place in a pot of fresh cold salted water; cook for 45 min.; drain.

Meanwhile, place oil, garlic, and onions in a baking pan and bake in preheated 350 F. oven until golden. Add beans, celery, parsley, salt & pepper, and hot water. Bake 30 min. longer. Remove from oven, stir the beans, pour in tomatoes (or diluted tomato paste). Return to oven and bake until only the oil remains.
