Instructions: In a pot, heat the olive oil over medium heat. When hot, add the onion, garlic, carrot, and bell pepper. Saute 5 minutes. Stir in the chili powder, cumin, undrained tomatoes, black beans, canned chilies, water, orange juice, and salt. Bring to a boil, reduce the heat to medium-low and simmer 20 minutes, stirring often to prevent sticking. Stir in the cilantro and garnish each serving with a sprinkle of Cheddar. 4 servings.
