Ingredients:

1 tbl water
1 tbl cornstarch
2 tsp cooking oil
3/4 lb boneless skinless chicken thighs cut into thin strips
or boneless skinless chicken breasts (about 3 - 4 ounce portions)
1 tsp cooking oil
2 cup sliced mushrooms (fresh)
1/4 cup chopped onion
2 tbl grated carrot
14 oz canned tomatoes diced, drained
1 tsp dried parsley flakes
1 whl bay leaf
1/2 tsp dried oregano crushed*
1/2 tsp dried basil crushed*
1 tsp granulated sugar (or Splenda)
1/8 tsp garlic powder or to taste
1/2 tsp salt or to taste
1/8 tsp pepper or to taste
1/4 cup white wine or
Instructions:
Instructions: *Not in the original recipe, my additions.

Stir water into cornstarch in small cup. Set aside.

heat wok or frying pan on medium-high. Add first amount of cooking oil. Add chicken strips. Stir-fry until no pink remains in chicken. Transfer to bowl.

Add second mount of cooking oil to hot wok. Add mushrooms, onion and carrot. Stir-fry for 3 to 5 minutes until tender-crisp. Add chicken.

Add next 7 or 9 ingredients to hot wok. Stir until boiling. Reduce heat. simmer, uncovered, for 10 minutes. discard bay leaf. Stir cornstarch mixture. Stir into tomato mixture until boiling and thickened. Add chicken and vegetables. Heat through.

Stir in wine.

Serves 4

Description: "Lots of saucy chicken."

Serving Ideas : Serve of noodles, pasta or spaghetti.
