Ingredients:
Amount Ingredient
2 tbl chopped almonds
1 sm zucchini in 1" cubes
1 cup vegetable broth
8 oz Crushed Tomatoes, Canned undrained
4 oz cooked Great Northern beans rinsed well
2 tbl chopped fresh basil or equivalent dried
1/2 dsh salt
1/2 dsh pepper
4 oz tortellini, spinach-filled Uncooked
fresh parsley to garnish
Instructions:
Instructions: Combine all ingredients in medium-size sauce pan. Mix well. Cover and cook over lowest setting for 30 minutes. Add water if needed. The tortellini should soft and hot. Garnish with an herb. Serve with parmesan.

I keep tortellini in the freezer. It makes a quick soup with a can of stewed tomatoes, can of broth, Italian herbs and spinach leaves, fresh parmesan.

i meant to say that its easy to add cooked beans to this - fresh and dried.
