Ingredients:

2 x Tomato, Cut In 1/4" Cubes
1 x Onion, Chopped
Salt, To Taste
Freshly Ground Black Pepper, To Taste
2 x Matzo
1 x Egg, Beaten
Instructions:
Instructions: Wet the matzo. crush with your hands into small pieces, place into a bowl.

fry the onion with black pepper until golden. add the tomato and salt and fry for 5 min. add the crushed matzo and mix well. cook together for 1/2 min. add the egg and mix well. cook for another 2 min.

NOTES : you may add some more interesting spices to the tomatoes before adding the matzo: e.g. turmeric, chili etc.
