Instructions: NOTES : I was wondering if the book also mentioned the hint I picked up a long time ago from either this list or the fat free list about how to make fat free heavy cream when it is called for in the body of a recipe. This will obviously not work to make whipped cream, but it does work nicely in recipes that call for that ingredient because of its consistency and non-powerful flavor on its own. I use it in my low fat version of Enchilada Verdes which calls for heavy cream and cream cheese. I use the store purchased fat free cream cheese and make my own heavy cream substitute as follows:
