Instructions: Combine first 5 muffin ingredients in a large bowl. Mix together egg, milk and oil; stir into dry ingredients and mix until moistened. Combine blueberries, sugar and flour. Fold into batter. Spoon batter into paper-lined muffin cups filling 2/3 full. Sprinkle with Struesel Topping.
Bake at 400 degrees for 25 minutes or until golden brown. Yield: 12 muffins. Struesel Topping: Combine flour, sugar and cinnamon. Cut in butter with pastry blender until crumbly. Set aside. Email this Recipe:
