Instructions: Mix together the first 6 ingredients then season to taste with salt and pepper.
Place the fennel and cabbage in a bowl and toss gently in the dressing. Arrange the chicory or little gem leaves around a bowl then spoon the fennel coleslaw into the middle. If you can find bronze fennel this will give the best colour. But ordinary herb fennel or another aniseedy herb such as chervil will also work well. Serves 4 Email this Recipe:
