1 x fennel bulb cored, and
cut into 1/2" dice
12 x Gaeta olives pitted
1 tbl roughly-chopped Italian parsley
3 tbl extra-virgin olive oil
1 tbl freshly-squeezed lemon juice
2 x garlic cloves minced
1 tsp oregano
Salt to taste
Instructions:
Instructions: In a large, non-reactive bowl, combine the fennel, olives and parsley. Toss with the olive oil, lemon juice, garlic and oregano. Season with salt and pepper to taste.

This recipe yields 6 servings.
