Instructions: Put a little olive oil in a frying pan, and lightly cook the onions, add the peppers and lightly cook them, just heating them through. Adding the minced garlic last, and only briefly, because garlic turns bitter if cooked too long or burnt. Remove the onions, peppers and garlic from pan, adding more oil if needed. Place the chicken breasts in the pan and cooking them slowly When breasts are done, pour the onions, peppers and garlic over them, lower the heat and cover, and let cook an additional 5 minutes allowing the flavors to lightly flavor the chicken.
Serve with rice or pasta NOTES : I make this one a lot for my boys at the rig camp I cook for, they really eat it up. Email this Recipe:
