2 lb New Potatoes
2 lb Orange Sweet Potato
3/4 cup Dried Apricots
3/4 cup Raisins
2/3 cup Orange Juice
2 oz Butter, cubed
Instructions:
Instructions: Preheat the oven to 350F degrees. Peel the potato and orange sweet potato, and cut into 1 1/4 in pieces. Cook in simmering water for 5 minutes, or until tender, then drain.

Combine the apricots, raisins and orange juice in a small pan. Cover and bring to the boil, then remove from the heat and leave for 5 minutes.

Combine the potato, orange sweet potato and undrained fruit in a shallow ovenproof dish. Dot with butter and bake for 45 minutes, or until lightly browned. Stir occasionally. Garnish with chives before serving.
