Instructions: Drain yogurt in a sieve lined with cheesecloth for 3 hours or till yogurt is reduced to 1 and 1/3 cups. Scrub and peel cucumber and grate into sieve. Let stand for 30 minutes. Rinse then squeeze lightly discarding liquid. Combine everything and mix well. Season with salt and pepper. Serve with lots of crusty bread.
