Instructions: Mix mayonnaise, feta cheese, olives and parsley.
Slice bread in half horizontally. Spread 1/2 of the mayonnaise mixture over bottom half of bread. Layer with lettuce and red pepper strips. Spread top half of bread with remaining mayonnaise mixture; place over fillings. Cut into wedges before serving. This recipe yields 4 to 6 servings. Great Substitute: Try 1 package (4-oz) of your favorite variety Athenos Crumbled Feta Cheese. Make-Ahead: Wrap sandwich tightly in plastic wrap. Refrigerate until ready to serve. Email this Recipe:
