Instructions: Beat shortening in mixer bowl.
Sift in flour, sugar, baking powder and salt. Add 2/3 cup milk mixing until moistened. Beat at high speed for 2 minutes. Add.. remaining 1/3 cup milk, eggs and vanilla. Bake for 2 minutes longer. Stir in 1 cup coconut. Pour into 2 greased and floured 9-inch cake pans. bake at 350 degrees for 30 minutes or until cakes test done; cool. Stir . remaining 1 cup coconut into butter frosting.
