Ingredients:

FOR THE CARAMELISED ONIONS ----------------
2 tbl Olive oil
2 x Onions, finely sliced
1 tbl Soft brown sugar
----------------- FOR THE FICELE PLATTER BASE ----------------
100 gm Rocket, (4oz)
100 gm Ficele, finely sliced (4oz)
Instructions:
Instructions: Heat the oil in a medium sized frying pan, add the sliced onion and saute for 5-10 minutes until soft and golden. Add the sugar, stir to combine and cook for a further 5 minutes. Remove from the pan and allow to cool.

Lay the rocket on a large serving plate, top with Ficele and crumbled Roquefort cheese, finish with the caramelised onions.

Notes Serve with chunks of French bread.

NOTES : A platter suitable to serve at a dinner party.
