1 tbl palm or brown sugar
500 gm sliced topside or rump
3 tsp grated ginger
1 sm onionc grated
1 tsp finery chopped garlic
1 tbl dark soy sauce
1/2 tbl vegetable or peanut oil
3 x spring onions cut into 3 cm pieces and quartered lengthwise
200 gm canned baby corn drained
80 gm sliced bamboo shoots drained
2 x green chillies seeded and sliced
2 x red chillies seeded and sliced
2 tbl fish sauce
1/2 cup water
Instructions:
Instructions: Crush palm sugar to a fine powder.

Cut the beef across the slices into very thin strips.

Place in a dish with the ginger oniongarlic sugar and dark soy.

Mix well cover with plastic wrap and leave for 1 hour turning occasionally.

Stir fry the spring onions baby corn bamboo shoots and chillies for 1 1/2 minutes then remove from the pan.

Re heat the pan to very hot and quicklly stir fry the beef until it has just changed colour.

Mix the fish sauce water and cornflour stir into the dish with any remaining marinade and cook stirring until thickened.

Return the vegetables and stir fry together 12 minutes.

Serve over a mound of white rice.

Hint. Make a milder but equally tasty and attractive dish by substituting green and red capsicum for the chillies.
