2 tbl minced shallots
1/2 tbl balsamic vinegar
1 tbl extra-virgin olive oil
1/4 tsp salt
16 x fresh figs each cut in half
lengthwise
6 cup trimmed arugula about 6 ounces
1/4 tsp freshly ground black pepper
Instructions:
Instructions: Combine first shallots, vinegar, olive oil and salt in a large bowl; stir well with a whisk. Add figs; cover and let stand 20 minutes. Add arugula and pepper; toss well. Top with cheese. Serve immediately.

NOTES : The combination of flavors in this recipe - sweet figs, sharp cheese and peppery arugula - couldnt be better; it received the highest rating in our test kitchens.
