Instructions: Mix together the figs, dates, raisins, ginger, nuts, lemon peel, golden syrup and lemon juice. Set aside.
Sift together the flour, sugar and salt. Rub in the butter, add egg yolk and enough water to form a stiff dough. Roll dough out 1/4 inch thick, cut into 2. Cover base of a lightly greased lamington tin with one half, spread the fruit filling evenly over then cover with other half of the dough. Glaze to with egg white and decorate with a fork. Bake at 325 oven 20-25 minutes. Remove from oven and sprinkle with sugar and cinnamon. Email this Recipe:
