12 x fresh firm figs
150 ml marsala or sweet muscadet
1 x juice of 2 oranges plus the zest of 1 sliced into thin julienne strips
2 tbl aromatic honey
4 tbl orange flower water or rose water or 1 tspn vanilla extract
2 tbl creme fra"che (optional)
Instructions:
Instructions: Combine the orange juice and Marsala or wine in a stainless steel saucepan.

Bring to the boil and boil rapidly for 5 minutes to reduce it.

Mix in the honey and the orange zest and simmer for 34 more minutes.

Place the figs in the pan and roll them around in the syrup over a gentle heat to poach them for 2 minutes.

They should not cook and soften but remain intact.

Off the heat add the orange flower water rose water or vanilla and let it cool.

Chill in the refrigerator for at least 1 hour.

Serve slightly chilled coating the figs with their syrup.
