Instructions: Add butter a dollop of sour cream and a shower of chopped chives.
Stick wedges of gorgonzola inside with a stash of rocket. Wrap bulbs of garlic and some thyme sprigs in foil and slow roast alongside the potatoes. Pop the garlic from its skins into the buttered jackets. Split the baked jackets scoop out the flesh butter the inside of the skins and return to the oven to crisp. Meanwhile mash the potato with butter an egg salt and pepper grated fontina or parmesan and truffle oil. Remove the skins from the oven and fill with the mashed potato. Email this Recipe:
