Instructions: Whip cream cheese on medium speed of a mixer for 2 to 3 minutes until slightly fluffy. Add vanilla extract and confectioners sugar. Trim bottom of strawberries so each stands upright. Use a melon-baller to scoop out stems and tops.
Fill a pastry bag fitted with a 1/2-inch star tip with cream cheese mixture; pipe into strawberries until cream cheese brims over the top. Top berries with toasted almonds (toast almonds in a 350 degree oven for 3 to 6 minutes). This dessert is perfect to serve at a buffet. This recipe yields 12 filled strawberries.
