Ingredients:

1 kg beef, fillet
4 slc bacon
60 gm butter
1 tsp mustard, whole grain
1 x onions, medium
1/2 cup beef stock
1/2 cup brandy
1/2 cup cream
1 tsp parsley, chopped
Instructions:
Instructions: Cut fillet into equal portions.

Press steaks into a neat round shape and wrap with a slice of bacon. Secure with a toothpick.

Heat 1/2 the butter in a pan and cook steaks to required degree of doneness. Remove from pan and keep warm.

To make the sauce:
Dice onions.

Add remaining butter and onions and gently cook for 1 minute, then add brandy and flame. Reduce by half, add beef stock, cream and mustard and reduce until a sauce consistency is obtained.

Note:
You can thicken this sauce slightly with cornflour if desired.

Return steaks to pan for 1 minute to heat through, season, and finish with chopped parsley.

* Serve with Potato Casserole and fresh green salad.
