4 sm fillets of sea bass with skin
1 x salt and freshly
ground black pepper
25 gm butter
----------------- For the sauce: ----------------
1 tbl oil
1 x shallot peeled and finely chopped
1 clv garlic crushed
1 x red pepper and 2 yellow peppers deseeded and chopped
wineglass white wine
300 ml vegetable stock
1 x bouquet garni
1 x salt and freshly ground black pepper
25 gm butter
4 x fresh scallops cleaned
Instructions:
Instructions: Place sea bass in a steamer season with salt and pepper and dot with butter. Steam until cooked through. For the sauce heat oil in a pan. Add shallot garlic peppers and fry until soft. Pour in wine and stock and add bouquet garni. Season with salt and pepper. Bring to the boil and simmer for 20 min. Remove bouquet garni and discard. Place mix in a food processor and whiz until blended. Strain and keep warm. Melt butter in a frying pan and cook scallops for 2 min each side.

To serve:
pour a little sauce on four warmed serving plates and place fish in the centre silvery skin side up. Decorate with aubergine courgette red and yellow peppers cut into squares and panfried scallops.
