Instructions: Place salmon rather snugly in a microwave-safe dish. Over the fish, squeeze the lemon juice and add soy sauce and water.
Cover the dish with plastic wrap and microwave on high about 3 1/2 minutes. Time the cooking so the fish is slightly undercooked - a little darker in the middle than on the top. Set fish aside while you microwave stir-fry vegetables according to package directions. Add the cooked fish, the sauce and the vegetables to a bowl of leftover heated rice.
