1 tbl Olive oil
1/2 lb Fish steaks (4 to 6 steaks) * see note
4 x Tomatoes peeled and quartered
1 pch Fennel seed
1 pch Thyme
1 sm Bay leaf
1/2 x Garlic clove crushed
4 x Peppercorns
1/2 tsp Salt
1/4 tsp Saffron
1 cup Dry white wine
Instructions:
Instructions: * Note: Good with firm-meated fish: Swordfish, tuna fish, salmon, etc.

Oil a large skillet. Place fish in skillet. Add tomatoes, fennel, thyme, bay leaf, garlic, peppercorns, salt, and saffron. Add wine. Bring to boil. Cover and simmer for 10 minutes, or until fish is well cooked but still firm. Cool fish in cooking liquid. Serve fish cold with 4 to 6 tablespoons of cooking liquid. Garnish with thin slices of lemon.

Suggested Wine: A chilled dry white wine: Alsatian Riesling; etc.
