Instructions: Known as nam plain Thailand nuoc mam in Vietnam and patis in the Philippines fish sauce is used in these countries much as soy sauce is used in China. A thin salty brown liquid made from salted shrimp or fish it has a very special flavour of its own. It is obtainable from Chinese and Far Eastern grocers. You can either use salt as a substitute or improvise a sauce by combining 1 tablespoon water with 1/2 teaspoon salt I/4 teaspoon soy sauce and 1/4 teaspoon sugar.
