4 x Heads Salmon
2 lb Prawns
1 whl Fennel Chopped
6 whl Onions Rough Chopped
10 whl Tomatoes Rough Chopped
5 x Cloves Garlic Rough Chopped
2 x Inch Ginger Rough Chopped
2 stk Celery Rough Chopped
2 bot White Wine
6 oz Pernod
1 bn Dill Weed Sprigs
1 bag Mussels
1 pt Cream Optional
1 tbl Turmeric Optional
2 pt Water For Stock
5 tbl Olive Oil
1 cup Carrots Finely Chopped
1/2 tsp Dry Mustard
1/2 tsp Oregano
1/2 tsp Paprika Optional
4 x Bay Leaves
Instructions:
Instructions: 1. Fry chopped vegetables in olive oil

2. add salmon heads and prawn shells then 2/3rds wine to 1/3rd water and boil at least an hour

3. sieve all contents

4. heat at last minute add fish, then prawns then herbs - 5 minutes max!

Serving Ideas : fresh nutty brown bread

NOTES : roi arthur had mussels, scasllops, oysters, fennel add potatoes for brittany style and serve over slices of bread use chicken or beef stock or both
