Ingredients:

1 kg fish fillets
1 x onions, medium
1 x green capsicum
----------------- MARINADE ----------------
1/2 cup olive oil
2 tsp garlic, crushed
1/2 tbl oregano, chopped
1 tbl parsley, chopped
1/2 cup white wine
2 tsp lemon juice
Instructions:
Instructions: Cut fish into 3 cm squares. Combine marinade ingredients in a bowl, add fish and marinate 2 hours.

Cut onion and capsicum into 2 cm squares.

Thread onto metal skewers, alternating fish with onion and capsicum.

Oil a tray and lay fish on top. Moisten fish with marinade.

Grill on BBQ or cook under a hot grill, turning and brushing with marinade until cooked through (about 6 minutes).

Serve on a bed of rice pilaf and glaze with hollandaise sauce.
