Instructions: Cut fish into 4 equal portions. Brush 1 Tablespoon of the oil in the bottom of a shallow baking dish large enough to accomodate the fish pieces in one layer with space in between. Mix remaining oil with wine, parsley, lemon juice, garlic, salt and black pepper. Sprinkle diced tomato over fish and pour on the oil-wine mixture. Sprinkle with bread crumbs. Bake at 350 degrees for 25 minutes or until fish flakes when probed with a fork.
