2 tbl vegetable oil
1 x flat fish, such as sole or flounder (about 1 1/2 pounds), ready to cook
4 x garlic cloves, finely chopped
2 x fresh red chilies, seeded, finely chopped WEAR GLOVES
1 x shallot, chopped
1/2 tbl lime juice
1/2 tsp crushed palm sugar
1/2 tbl finely chopped lemon grass
2 tsp fish sauce
Instructions:
Instructions: In a wok, heat oil, add fish, skin-side down first, and cook 3 to 5 minutes per side until lightly browned and flesh is opaque when tested with a knife.

Using a spatula, transfer to a warmed platter, cover- and keep warm. Add garlic to wok and fry, stirring occasionally, until browned.

Stir in chilies, shallot, lime juice, sugar, lemon grass and fish sauce.

Simmer 1 to 2 minutes. Pour over the fish and garnish with Chile Flower.
