Instructions: Stir together cracker crumbs, Parmesan cheese, and 1/2 teaspoon pepper. Combine remaining 1/2 teaspoon pepper, mayonnaise, and garlic.
Reserve 1/2 cup mayonnaise mixture, and spread remaining mixture evenly over fish fillets. Dredge fish in crumb mixture, and place in a shallow pan. Bake at 400 degrees for 15 to 20 minutes or until fish flakes easily with a fork. Process reserved 1/2 cup mayonnaise mixture and bell peppers in a blender or food processor until smooth, stopping to scrape down sides. Serve over fish. This recipe yields 4 servings.
