Instructions: Melt the Buttons in a fairly large bowl then mix in the condensed milk and icing sugar. Stir in the lemon rind, apricots and coconut with just enough lemon juice to make it pliable. Chop 6 Flakes into 3 even sized pieces then mould spoonfuls of the coconut mixture round each piece of Flake to form a ball. Make remainder in the same way. Crush about 5 more Flakes and roll the balls in this to give them a light coating. If it does not stick easily, add a drop more lemon juice to the mixture. Leave in the fridge to firm up completely but eat at room temperature to bring our the full flavour.
Cooks tip: It is easier to roll the mixture with damp hands so wash them a couple of times during the process. NOTES : Makes between 16-18 Email this Recipe:
